				<content:encoded><![CDATA[<p>If you’ve ever found the idea of using any of these exotic ingredients, intimidating, this recipe will allay your fears. Also, if you water the gravy down a little and eat it with rice or egg noodles, it makes for a delicious alternative to a laksa. -Poh Ling Yeow, Malaysia Kitchen Australia Ambassador</p>
<h2>Ingredients</h2>
<ul>
<li>1kg prawns de-shelled and cleaned OR 650g of a firm fleshed fish</li>
<li>500g pineapple, cut into 6mm triangles</li>
<li>500ml water</li>
<li>3 pieces dried tamarind</li>
<li>5 kaffir lime leaves</li>
<li>350ml coconut milk</li>
<li>2-3 tsp salt</li>
<li>3 Tbs caster sugar</li>
<li>2 Tbs lime juice for balancing</li>
<li>Rempah (wet spice paste)</li>
<li>15-20 dried long red chillies*, deseeded*, soaked in boiling water until soft, drained and chopped</li>
<li>2 1/2 tsp belacan</li>
<li>3 cm fresh galangal, peeled, sliced finely</li>
<li>4 stalks lemongrass (white part only), sliced finely</li>
<li>300g red eschallots OR Spanish onion, peeled and sliced</li>
<li>3 large cloves garlic, peeled and halved</li>
<li>5 candlenuts or macadamia nuts</li>
<li>170ml vegetable oil</li>
</ul>
<h2>Notes</h2>
<ul>
<li>Dried chillies – There are several types of dried chillies. For this recipe, please choose the type that are about finger sized. The smaller ones are very hot and the broader, larger ones mild. Also please never replace dried chillies with fresh ones as they don’t impart the smokiness of flavour and depth of colour required for this dish.</li>
<li>Deseeding dried chillies – To easily deseed the dried chillies, cut them into quarter segments with scissors and drop them into a colander with large holes and then shake the seeds out.</li>
</ul>
<h2>Method</h2>
<div>
<p>Blitz all rempah ingredients in a blender until you achieve a fine paste.</p>
<p>Heat rempah in a large, heavy based saucepan or wok on medium heat and cook for about 10 minutes, stirring continuously until caramelised and fragrant. At this point the rempah should have turned a darker red and the oil will begin to separate from the rest of mixture.</p>
<p>Add pineapple, water, tamarind, kaffir lime leaves and bring to boil, then reduce heat to simmer for another 10 minutes. Add coconut milk, salt and sugar and bring to boil, then add prawns/fish at very end to cook for 5-10 minutes or until cooked through. Taste just before serving. More salt, sugar or lime juice may be required to balance flavours at the end.</p>
<p>Serve with steamed jasmine rice and wedges of cucumber just in case your lips need cooling!</p>

<ul>
<li>2 x 200g skinless cooked chicken breast</li>
<li>½ cup fresh pineapple, ½ round thinly sliced</li>
<li>1 avocado, skin and pip removed, cut into thin slices</li>
<li>1 tbsp sesame oil</li>
<li>1 tbsp of light soy sauce</li>
<li>1 tbsp of chopped coriander</li>
<li>1 tbsp of chopped mint</li>
</ul>
<h2>Method</h2>
<div>
<ol>
<li>Place the chicken, sesame oil, soy sauce, coriander and mint into a mixing bowl and lightly mix.</li>
<li>Pre-heat the BBQ to a high heat. Place the marinated chicken breast on a large piece of aluminium foil followed by slices of pineapple and avocado. Wrap into a sealed package and repeat for the second chicken breast.</li>
<li>Place on the BBQ for 20 minutes.</li>
<li>Once cooked serve with mixed salad and serve.</li>

<li>2 tbs olive oil</li>
<li>2 cups quinoa</li>
<li>4 cups water</li>
<li>dash of salt</li>
<li>2 cups fresh pineapple, chopped</li>
<li>1 avocado, peeled and roughly chopped</li>
<li>1⁄2 cup red onion finely chopped</li>
<li>1⁄2 cup fresh coriander leaves</li>
<li>1 cup cucumber, roughly chopped</li>
<li>Juice of 4 limes</li>
</ul>
<h2>Method</h2>
<div>
<ol>
<li>Wash the quinoa in a fine strainer.</li>
<li>Place the water, salt and quinoa in a medium pot and bring to a boil.</li>
<li>Reduce heat to low and simmer until water is absorbed, about 20 minutes.</li>
<li>In a medium bowl mix all the salad ingredients and set aside.</li>
<li>Toss the cooked quinoa with the pineapple mixture and serve.</li>

<li>1⁄2 fresh pineapple, diced</li>
<li>2 red chilies &#8211; sliced (seeds removed if required)</li>
<li>2 chicken stock cubes</li>
<li>Serve with brown rice and steamed vegetables</li>
</ul>
<h2>Method</h2>

<ol>
<li>Pour coconut milk, fish sauce, curry paste and stock into pot and dissolve to creamy consistency.</li>
<li>Bring curry to the boil over medium heat.</li>
<li>Add chicken and continue to cook over medium heat for 5 mins.</li>
<li>Add pineapple, kaffir lime leaves and chillis.</li>
<li>Continue to cook over low-med heat for 15 min.</li>

<li>Base</li>
<li>1⁄2 cup wholemeal flour</li>
<li>1 cup wheat bran</li>
<li>1⁄4 tsp baking powder</li>
<li>1⁄4 tsp salt</li>
<li>1⁄2 cup water</li>
<li>Topping</li>
<li>1⁄2 cup tomato paste</li>
<li>1⁄2 pineapple chopped</li>
<li>150g shaved lean ham</li>
<li>1⁄2 medium capsicum</li>
<li>1⁄2 bag baby spinach</li>
<li>1/3 cup feta</li>
<li>1/3 cup mozzarella cheese</li>
<li>+ large green salad dressed with olive oil and Balsamic vinaigrette and 2 tbs toasted</li>
<li>slivered almonds</li>
</ul>
<h2>Method</h2>
<div>
<ol>
<li>Mix the base ingredients in a large bowl.</li>
<li>Spread into a 12 x 8 inch pizza pan baking dish coated with cooking spray.</li>
<li>Bake the base in the oven for 45 mins at 180c.</li>
<li>Spread tomato paste over base and sprinkle all ingredients except baby spinach, over the base.</li>
<li>Bake for 20 mins at 180c.</li>
<li>Top with baby spinach and serve.</li>
</ol>

<p>Serve slices with a generous green salad topped with toasted slivered almonds.</p>

<ul>
<li>12 green king prawns, peeled and deveined</li>
<li>1 pineapple diced into bite-sized chunks</li>
<li>250g Haloumi cheese chopped into bite sized chunks</li>
<li>1 red capsicum, cut into 3cm pieces</li>
<li>1 green capsicum diced, cut into 3cm pieces</li>
<li>300mL Natural yoghurt</li>
<li>1 handful of fresh mint</li>
<li>1 clove of garlic</li>
</ul>
<h2>Method</h2>
<div>
<ol>
<li>Thread a prawn, piece of red and green capsicum, piece of haloumi and piece of pineapple onto a skewer, with prawn in the middle. Repeat to create a colourful kebab.</li>
<li>BBQ until prawns are cooked through and the other ingredients are ever so slightly charred (approx. 7 mins).</li>
<li>Served drizzled with mint yoghurt. Combine natural yoghurt, 1 clove of crushed garlic and some chopped mint.</li>

<li>Mix all the dry ingredients in a bowl.</li>
<li>In separate bowl, mix the wet ingredients before adding to the dry mix. Combine well. Add a splash of milk if too dry (this will depend on the consistency of the yoghurt).</li>
<li>Gently mix through the fruit</li>
<li>Spoon into muffin tin, adding a few pieces of pineapple on top</li>
<li>Bake in preheated oven at 180c for 30 minutes.</li>
<li>Leave to cool for 5 minutes in the tin before turning out. Place onto wire rack to cool.</li>

<ul>
<li>4 cups chopped fresh pineapple</li>
<li>2/3 cup coconut milk</li>
<li>4 1⁄2 tbs lime juice</li>
</ul>
<h2>Method</h2>

<ol>
<li>In a blender, puree all ingredients.</li>
<li>Pour mixture into moulds and freeze for an hour (until they get &#8216;slushy&#8217;).</li>
<li>Insert sticks and freeze for 7 hours until firm.</li>
